Crab Crusted Fillets
American Pride Seafood Brand Fillets: Alaska Flounder, Catfish or Tilapia
Serves 4

Ingredients
4 each Fillets of choice (2-3 oz)
2 tbsp Breadcrumbs
1 tbsp Mayonnaise
1 cup Special Crab
1/2 each Lemon
1 tsp Parsley, chopped Onions, fine chopped, Old Bay Seasoning
To taste Salt
To taste Pepper

Method of Preparation:

1. Heat 1 tablespoon of oil in medium sized sauté pan over medium-high heat. Once oil is hot, add onions. Sauté until light golden brown and caramelized, about 3-5 minutes, moving around the pan constantly. Season with salt and pepper, and set aside in bowl to cool.

2. Mix remaining ingredients together in a mixing bowl, except for the lemon, using a rubber spatula. Squeeze juice out of lemon, mix into crab mixture, and discard lemon.

3. Press ¼ of mixture on top of thawed sole fillet, about ½" thick.

4. Place fish on baking sheet lined with parchment paper. Once all pieces are crusted, place in pre-heated 375°F oven. Bake for approximately 10 minutes, or until fish is cooked through and topping is golden brown.
