Hazelnut Breaded Fillets
American Pride Seafood Brand Fillets: Alaska Flounder, Catfish or Tilapia
Serves 4

Ingredients
8 each Fillets of choice (2-3 oz)
2 cups Toasted Hazelnuts, chopped fine
2 tsp Chopped Parsley
2 each Large Eggs
1 cup Flour
1 tsp Parsley, chopped Onions, fine chopped, Old Bay Seasoning
To taste Salt
To taste
Pepper
A/N Vegetable Oil

Method of Preparation:

1. Mix together the hazelnut, parsley, and salt & pepper in a stainless steel mixing bowl. Set aside.

2. Whisk eggs in mixing bowl, with milk if desired, and set aside.

3. Mix together flour, salt and pepper in mixing bowl.

4. Bread thawed fish by placing first in flour, shaking off excess. Place in eggs to coat completely and allow extra to drip off. Then, press into hazelnut mixture to coat both sides evenly. Place on baking sheet until all pieces of fish have been breaded.

5. Place ½" of vegetable oil in large skillet and heat over medium flame. Allow to get hot and place 2 pieces of fish in pan. After bottom is golden brown, about 1 minute, flip with spatula and allow to cook through, about 1-2 more minutes.

6. Place cooked fish on baking sheet lined with parchment paper or paper towels to drain. Place sheet in oven to keep warm while cooking remaining fillets.

Serving Suggestions:
Try topping this fish with buerre blanc and serve with grilled asparagus and basmati rice pilaf.
