Pineapple Curry Spiced Fillets
American Pride Seafood Brand Fillets: Alaska Flounder, Catfish or Tilapia
Serves 4

Ingredients
8 each Fillets of choice (2-3 oz)
1 cup Pineapple Juice
2 tbsp Curry Powder
1/2 tsp Crushed Red Pepper
2 tsp Sugar  
To taste Salt
To taste Pepper

Method of Preparation:

1. Place all ingredients except fish in a small pot and heat to a boil. Shut off and allow to cool.

2. Once marinade is cool, pour over fish and allow to marinate under refrigeration for 1-8 hours.

3. Place marinated fish on baking sheet lined with parchment. Cook in pre-heated 375°F oven for about 8-10 minutes, or until flaky.

Serving Suggestions:
Top with pineapple chutney and serve with warm basmati rice and sautéed summer vegetables.
